Mario Perera appointed Executive Chef at the Dorchester in London


The Dorchester hotel in London has announced the appointment of Mario Perera as the Executive Chef with immediate effect.

 

Mario Perera first joined the Dorchester as a commis chef in 1995  after moving to London from his home country Sri Lanka. He rose up through the ranks of the  culinary brigade to become a senior sous chef. In 2010, Mario moved on to be part of the re-opening team at the Four Seasons Park Lane for three years before returning to his beloved Dorchester in 2017 as executive sous chef.

 

Russell Platt, Director of Food and Beverage whilst announcing his promotion and congratulating Mario on this well-deserved achievement, goes on to describe Mario as highly regarded for his passion for excellence and his dedication to his team’s training and development, adding “ I know that he will succeed in driving our culinary offering forward with his creative and innovative approach as we look to reopening the hotel in the next few months and welcome our guests back with exciting new menus.”

 

A little known secret is that Mario first heard of the Dorchester as a child in Sri Lanka when coming across an advertisement in a catering magazine that stated, “The Dorchester, the place to be and the place to work’. He said to his mum and dad. ‘I’m going to work there one day’, and the rest they say, is history.

 

Mario whose passion for cookery came from his parents, who initiated him to the culinary world when he was 9 years old, joined the Taj Samudra, Colombo at the age of 16 where he did his apprentice programme, specialising in French cuisine, whilst working to gain experience in the banqueting kitchen, bakery and confectionary section and in the hotel’s Chinese restaurant as well.

 

After completing a course in cookery at the Sri Lanka Institute of Tourism and Management, Mario went to Thames Valley University for six years, following Professor Forsket to master his chosen field (pastry, kitchen and larder).

 

The 250 roomed Dorchester, one of London’s iconic 5-star hotels, occupies the most prestigious acre and a half of real estate in the world, in the heart of Mayfair overlooking the glorious green expanse of Hyde Park. The preferred hotel of British society.
